Lalu’s journey began after spending 15 years working abroad, only to return home due to the pandemic. Faced with uncertainty, he reflected on his mother’s small-scale mushroom farming back in the day. The pandemic had made people more health-conscious, and he realized that Kerala, where he lived, produced only 2% of its mushroom needs. With the knowledge that producing one kilogram of mushrooms costs around ₹80 but can earn ₹500, Lalu felt motivated.

With a solid plan in hand, he trained at the Kollam Sadanandapuram Agricultural Knowledge Centre before starting his farming journey. Within no time, his production surged to five kilograms daily.

Confronting Market Challenges

However, producing mushrooms led to its own challenges. While Lalu succeeded in cultivation, finding the right market was tough. Fresh mushrooms had a short shelf life, and he often found his unsold stock spoiled by the next day. This left him frustrated, and the venture seemed to turn into a loss-making business.

During this tough phase, Lalu sought help from the agricultural knowledge centre again. He understood the need to create value-added products from the fresh mushrooms he had. Inspired by the global coffee market, he developed a revolutionary idea: ‘Mushroom Coffee.’

Innovating with Mushroom Coffee

After two years of extensive research and trials, Lalu partnered with experts from the Kerala Agricultural University and scientists from the CFTRI to develop his unique product. The coffee incorporated not only regular mushrooms but also premium varieties like Lion’s Mane, known for brain health, and Turkey Tail, rich in medicinal properties. His blend of 70% mushrooms and 30% coffee created a healthy drink, packed with vitamin D, as confirmed by a study from the National Institute of Food Technology in Thanjavur.

“Only a small amount of coffee powder is added just for flavor,” Lalu explains confidently.

Uniting the Community

Lalu’s big break came when he received a large order from Dubai, requiring 250 kilograms of coffee powder, which needed 3000 kilograms of fresh mushrooms. Realizing he couldn’t meet this demand alone, he decided to involve local farmers who had been struggling to find their market.

With support from the agricultural department and local panchayat, he trained over a hundred farmers and assured them that he would buy all the mushrooms they produced at a fair price, giving them hope and financial support in the process.

Government Support and Branding

Setting up a production unit required a substantial investment of about ₹20 lakhs. With various government schemes, he secured an ₹8 lakh subsidized loan from the PM’s Formalization of Micro food Processing Enterprises (PMFME) scheme. He also received assistance through the Agricultural Development Programme and the State Horticulture Mission.

Lalu branded his products as ‘La Bae,’ in collaboration with Kerala Agro branding, pricing his mushroom coffee at ₹750 for 100 grams. He follows a made-to-order model, and now takes orders from various places including the UAE, USA, and UK. When some customers complained about the prices, he quickly adapted by offering smaller packets, ensuring accessibility while maintaining quality.

Expanding Product Range

In addition to Mushroom Coffee, Lalu has created several other innovative products, such as mushroom vacuum-fried snacks, mushroom capsules, Moringa-mushroom soup powder, and nutrient bars, to name a few.

Lalu hopes to generate an annual revenue of ₹50 lakhs with a profit of ₹15 lakhs in the next financial year. From facing uncertainty after losing his job to lighting the way for local farmers, Lalu Thomas stands as a testament to the power of resilience and innovation. His story teaches us that with hard work and a creative mindset, even the most challenging situations can lead to great opportunities.
